CHATEAU SAINTONGEY BORDEAUX BLANC

TASTING:

Acacia flowers, pear and grapefruit scents.
Delicately oily in the mouth, a taste of mature fruit, a good structure.
A very subtle note of peach at the end.

SUITABLE DISHES :

Serve with a fricassée of scallops or fish, perfect with blanquettes or roasted fowl.

PRODUCTION :

Appellation: A.O.C. DRY WHITE BORDEAUX.
Soil: clay and chalky.
Yield: 49 hl /ha.
Average age of vines: 20 years old.
Production: 40,000 bottles.

VINIFICATION :

Grape varieties: 30% Sauvignon, 75% Sémillon. 
Mechanical harvesting. Aged in oak barrels for 3 months.
Vinification: skin contact for 6 to 8 hours, cold settling.
Ageing: can be drunk immediately but will develop well for 3 to 4 years.
Bottling: bottles stored horizontally in cages at the property, without labels, for 3 month.
Degree: 12.5 % vol.
