MENU
Seared Scallops with Watercress, celery root puree, kohlrabi, and celery seed.
Pairing: Two whites from Provence. The Chateau Saint Maur is 100% Vermentino, from the French Riviera, a Cru Classé, with notes of white flower dancing around aromas of fresh apricot, and a voluptuous concentration resulting in an unmistakable viscosity. The Chateau Romanin is a cuvée of exceptional minerality, with notes of toasted biscuit, pear, almonds and an overall uniquely enjoyable feel. These two very southern French whites will be a delightful study with the scallops.
