Please join us on Tuesday, November 1st for dinner with Sovereign Remedies in the Parlor of the new event space, the historic building known as the Asheville Beauty Academy, located at 28 Broadway Street in Asheville. You will be greeted with a glass of Sparkling CAVA at 6:30 and seated for a 5 course dinner at 7pm.
 
The innovative dishes from chef David Van Tassel of Sovereign Remedies will be paired with sparkling wines from Castellroig (https://www.castellroig.com/index.php/ca/) and Tempranillo Ribera del Duero from Bodegas Y Vinedos. Coursed dinner with wine pairings crafted by Sovereign Remedies Executive Chef David Van Tassel and led by Spanish vintners Marcel Sabate of Castellroig Corpinat and Ricardo Esteban of Valderiz. Event will be hosted by Metro Wines, 3 Keys Distributing, and Asheville Beauty Academy.

Sovereign Remedies:
Sovereign Remedies was opened in October of 2014, by Charlie Hodge and his partner Sunil Patel bringing together years of work in the hospitality industry with years of farming the land. Sovereign Remedies is housed in the New Medical Building on North Market St. A seven story building, it was once was office space for Asheville’s doctors and dentists, a drug store and barber shop, it now houses a wide variety of law, engineering, and environmental protection agencies, as well as our dear friends at Herbiary.

Somewhere between warm and regal the space is filled with visual treasures of vintage service-ware, rich black and gold curtains, and locally built furniture and fixtures by Iron Maiden Studios. The 14-foot high windows dominating two of our walls, allow for plants to thrive by filling the room with natural light during the day. At night soft lights and candles create an inviting glow for guests and passersby.

The term Sovereign Remedies was discovered while reading about the great history of the Appalachian Mountains. As the area did not allow for easy access many families found and created their own medicine; this proprietary knowledge was known as each family’s Sovereign Remedy. This concept fuses perfectly with our ethos in that the cherished bottles those early settlers filled with local medicinal herbs to care for themselves and their families reflects the way we bring together the local bounty of the Appalachian region to care for our guests and visitors, our own Sovereign Remedy.
 
Castellroig:
Located in Penedès, the Sabaté i Coca estate stretches along the Bitlles valley between the villages of Torrelavid and Sant Pere de Riudebitlles. Brothers Josep and Marcel, winemaker and alma mater of the project, are the fourth generation of winegrowers and currently run the estate. Their father Marcelino, a former sharecropper, was the driving force behind the modern winery and transformed the ancient winemaking facilities in the masía (Catalonia’s traditional farmhouse), dating from the 18th century, into a wine museum.
The family only uses their own grapes to make Cava and still wines under the umbrella of the DO Penedès. They grow 40Ha organically with up to 18 different types of soils and 66 plots which are fermented separately. Soils have been formed by the accumulation of ancient sediments over a chalky crust with abundant carbonate nodules.
 
Bodegas Y Vinedos:
After rising to the very top ranks of quality in Rioja with a forward-thinking style and site-specific vineyard focus, Juan-Carlos López de Lacalle of Artadi shocked the world by leaving the Rioja appellation in 2015. He is now forging a bold new path for the future of the region. "The winery keeps alive the viticultural traditions of our ancestors, fighting against the destructive advances that chemistry has introduced into industrialized and disrespectful agricultural management. We aim to preserve the production and the enjoyment of a "living" wine, with feelings and spirituality, integrating nature and the vineyard in our own lives."
